Chef Guillaume's homemade chocolate cookies with almond filling

Chef Guillaume, Executive Chef at the Dinarobin Beachcomber Golf Resort & Spa in Mauritius, has created this simple almond and chocolate cookie recipe for you to try at home with your children. For many, confinement means spending more time with your family, often over a delicious meal. Not only do you need to plan three meals a day, seven days a week, but it’s also important to find ways to keep the children busy. This recipe allows you to do both, helping turn downtime into a moment of play and learning, and allowing you to bond with your loved ones. 


Chef Guillaume and his daughter Margot have assembled the following simple ingredients: 

100 g of caster sugar or brown sugar
175 g of all-purpose flour
50 g of almonds
100 g of dark chocolate
125 g of butter
One egg 
11g baking powder

Margot starts by cutting the unpeeled almonds in half. Meanwhile, Chef Guillaume places the softened butter in a bowl with the sugar and creams the two together with a wooden spoon. He then adds the flour and the egg, then the baking powder, and continues to mix the ingredients together. The next step is to add the chocolate and halved almonds. Finally, father and daughter roll the mixture into ping-pong sized balls and place them in a staggered pattern on a baking tray lined with grease-proof paper. The tray is placed first in the refrigerator for 30 minutes, then in the oven (preheated to 170°C) for 10 to 12 minutes. 

The result is exactly what you’d expect: beautifully golden cookies that are simply delicious and will make for unforgettable memories when life goes back to normal.
